I played around with doxygen a bit. My idea was to make doxygen render a documentation of all *FiniteElement classes in LaTeX.  The file could be included in the main tutorial and serve as a reference list of all available element implementations.

However I couldn't come up with something usable. Apparently, the doxygen LaTeX output is not configurable enough, and the resulting documents didn't look good enough for me.  For example, there doesn't seem to be a way to have just class descriptions without the method descriptions.  But we don't want the method descriptions---they are the same for each element anyways.
