But we currently use InteratorImp<codim,ptype,g> with g=GridImp and g=const GridImp.

Regarding the guarantee: Yes the classes exist but it is not stated that the grid or the gridviews return theses classes. The type is always the one from the corresponding GridFamily which is just said to be 'a model for Dune:LevelIterator'. Thus I'd say the difference is an implementation detail and not part of the interface.
